There's something to be said for a business that knows when to fold and move forward. Zest Kitchen Supply spent years building a name downtown, and now they're rebranding as Popover after a copyright dispute—not exactly the ending they drew up, but they're still here, still operating on Montana Avenue, and that matters more than what's on the sign. Plenty of small retailers in this region have simply closed the doors when the legal bills started stacking up. The fact that the owners found a way to keep serving folks who've relied on them for their kitchen needs says something about the kind of people we've got trying to hold down Main Street in Billings. Here's hoping Popover becomes just as familiar a name around town as Zest ever was.
